Santorini is at its most expensive in July and August. Shoulder months keep the caldera and lose some of the crush. The sea is swimmable from roughly June through October; September often has the warmest water.
May–June
Warm enough to swim on many days, hotels below August rates, and Oia still walkable in the late afternoon. One of the two best windows for a first visit. Some beach businesses open fully only in June.
September
Sea still warm, nights softer, and the caldera path easier to walk. The other best window for most travellers. Ferries remain frequent. This is the honeymoon month that still feels like a village in the morning.
July–August
Peak glamour, packed sunset spots, cruise-day midday crowds, and prices to match. Book cave hotels 6–12 months ahead if this is your only slot. Go to Oia early or skip the castle and watch from Imerovigli.
Winter
Many hotels and restaurants close. Fine for a quiet photography trip and empty caldera paths; thin for a first-time island holiday. Wind and ferry cancellations are more likely. Athens plus a mainland ruin is the better winter Greece.
Shoulder vs peak, in practice
If you can move your dates by three weeks out of August, do it. The view does not change. The queue, the room rate, and whether you can walk Oia after 18:00 do.
